Newly dug baby potatoes, cooking normally until I cut open the white (not purple skinned) spuds. None were sun greened. As they opened the water turned a teal green-blue. I’ve seen similar posts so I separated the water into three bowls and added baking soda (darkened a little) to one and vinegar to another. Immediately turned light pink!
